Atherosklerose ist ein multifaktorielles Geschehen mit einer sehr komplexen Wechselwirkung, zu der Hyperglykämie, Hyperlipidämie, oxidativer Stress und Veränderungen der Gerinnung und Fibrinolyse gehören. Die Menopause ist durch einen Rückgang des Östrogenspiegels gekennzeichnet. Der Östrogenmangel verursacht eine endotheliale Dysfunktion, die durch eine erhöhte Produktion von ROS und eine Veränderung des Lipidprofils vermittelt wird. Es wurde nachgewiesen, dass Austernpilze sich günstig auf die Serumlipide auswirken, die endothelabhängige Vasodilatation verbessern, den Antioxidantien- und Östrogenspiegel erhöhen und die intravaskuläre Thrombenausbreitung verringern. Diese Ergebnisse haben dazu geführt, dass die Austernpilze die endotheliale Dysfunktion verbessern und vor der Entwicklung von Atherosklerose schützen.
