Il y a de nombreuses raisons à cela, l’une d’entre elles étant les pertes alimentaires qui se produisent après la récolte et dans le système de commercialisation. Il est prouvé que ces pertes tendent à être plus importantes dans les pays où les besoins alimentaires sont les plus grands. Les pertes alimentaires post-récolte sont définies comme des pertes alimentaires qualitatives et quantitatives mesurables tout au long de la chaîne d’approvisionnement, depuis le moment de la récolte jusqu’à la consommation ou d’autres utilisations finales.
