Le présent travail vise à caractériser physiquement et biochimiquement le gel parenchymateux obtenu à partir de différentes périodes de croissance de l’Aloe vera L. Un effort concerté a également été fait pour établir une relation possible entre les diverses propriétés de l’hydrogel d’aloès à l’aide d’analyses chimiométriques. Une telle caractérisation fournit des informations primitives avant le traitement du gel et l’optimisation des composants de la chaîne de valeur de l’Aloe vera. Ces informations permettent également de caractériser le gel dans diverses conditions de traitement et de le comparer au gel natif afin d’optimiser les opérations de traitement. En outre, les présents résultats peuvent être utilisés pour établir des techniques de réhydratation de l’hydrogel d’aloès.
