L’objectif de cette étude était de vérifier l’adultération et la fraude dans des échantillons de lait entier pasteurisé de types A, B et C vendus dans la ville d’Assis-SP. 25 échantillons ont été analysés sur une période de 5 mois. Les tests suivants ont été effectués sur tous les échantillons : cryoscopie numérique, densité, pH, matière grasse, acidité en °Dornic et test de lacto-sédimentation. Les résultats ont été comparés aux normes de la législation en vigueur au Brésil, l’instruction normative n° 51 du 18 septembre 2002. Sur les 25 lots de lait analysés, seuls 12% répondaient à toutes les exigences légales. Les déterminations par lacto-sédimentation et cryoscopie ont montré les plus grandes irrégularités dans les analyses effectuées. La conclusion est qu’il est nécessaire d’améliorer le contrôle de la qualité dans la production du lait pasteurisé consommé dans la ville d’Assis - SP.
