Il ketchup, un prodotto alimentare complesso, presenta un comportamento non newtoniano e di assottigliamento al taglio: la sua viscosità diminuisce sotto sforzo di taglio. È anche tissotropico, il che significa che la sua viscosità diminuisce nel tempo quando viene sottoposta a taglio. Questo comportamento è influenzato da ingredienti come pectina, idrocolloidi e altri stabilizzatori, che ne influenzano il flusso durante la manipolazione, la conservazione e la lavorazione. A differenza dei fluidi newtoniani (ad esempio, l’acqua), la cui viscosità rimane costante indipendentemente dalla velocità di taglio, la viscosità del ketchup cambia con la forza applicata. Ecco perché diventa più facile da versare quando la bottiglia viene agitata, inclinata o spremuta. A riposo, il ketchup è più viscoso; sotto l’effetto della forza, scorre più facilmente. La tissotropia implica inoltre che, anche se la velocità di taglio rimane costante, la viscosità continua a diminuire nel tempo, il che è fondamentale per comprendere il suo comportamento nelle applicazioni reali, come l’imballaggio e l’uso da parte dei consumatori.
