La ciencia actualmente se encuentra en una etapa en donde se busca nuevos microorganismos que sean beneficios para el ser humano, además de ayudarnos a tener una microbiota gastrointestinal sana, por ello, comienzan a tomar relevancia el estudio de alimentos fermentados que pueden tener estos microorganismos denominados probióticos.La madre de vinagre es un consorcio de microorganismos entre levaduras, Bacterias Ácido-Acéticas (BAA) y de manera ocasional Bacterias Ácido-Lácticas (BAL), estas últimas se encuentran en vinagres artesanales u orgánicos que no tienen un proceso estandarizado como son los de origen industrial.El metabolismo de este alimento fermentado es bastante complejo, debido a la interacción de las levaduras y las BAL que llevan a cabo una fermentación alcohólica con la formación de etanol que después es metabolizado por las BAA produciendo así el ácido acético que se consume en las diferentes preparaciones.
