Ce document présente une analyse détaillée de la chaîne de production porcine dans l’État du Mato Grosso, ainsi qu’une analyse des taux d’imposition effectifs des élevages de porcs et des abattoirs dans cet État. À cette fin, les taxes sont analysées, ainsi que leur impact sur les intrants et l’effet sur le consommateur final. L’étude s’adresse aux chercheurs, aux dirigeants d’entreprises agroalimentaires, aux différentes administrations, aux consultants et à tous ceux qui s’intéressent à l’économie agroalimentaire en général. Cette étude se distingue des autres publications par des analyses plus approfondies des coûts de production et de la fiscalité dans le processus de production et par l’utilisation de la matrice des entrées-sorties de Mato Grosso, élaborée par des chercheurs de l’Université fédérale de Mato Grosso en 2010, pour calculer l’impact effectif des impôts indirects sur la demande finale de viande de porc.
