Ce tome, qui est constitué d’une partie de sa thèse de doctorat soutenue en septembre 2018, retrace la période allant du 17ème siècle à la première guerre mondiale. Il traite en particulier de l’esthétique du geste de découpe perdu au moment de la révolution et retrouvé en partie lors du grand mouvement du service à la russe au XIXème siècle.
