Dieses Handbuch liefert Hintergrundinformationen, die bei der Entwicklung von Normen für Ziegenfleischprodukte hilfreich sein können, und enthält einige Elemente von Normen und Besonderheiten für die Aufzucht einheimischer Ziegen, Methoden der Fleischgewinnung sowie für die Bewertung und Einstufung von Schlachtkörpern für Ziegenfleischqualität, um die von den Verbrauchern geforderten Fleischqualitätsmerkmale zu erfüllen. Produktnormen können auch Erzeugern, Verarbeitern und Einzelhändlern helfen, fundierte Management- und Vermarktungsentscheidungen zu treffen.
