Nowadays an escalating global epidemic obesity is taking over many parts of the world, with consequent serious health disorders. This book aims to explain the essential background of the marine carotenoid fucoxanthin, focusing on its potential anti-obesity effects: fucoxanthin could be developed into promising medicinal products and functional food; therefore, isolation and investigation of such novel bioactive from marine algae is actually attracting great attention. Considering the unique structure of fucoxanthin, as well as its safety, its significant bioactivities and pharmacological effects, it could represent a promising nutritional ingredient hoping that, in the future, the introduction of marine bioactive substances into human habitual diet could lead to a reduction in the incidence and severity of many disorders. Our style food is crucial in promoting human health: further studies should go in this direction in order to show a new preventive and potential therapeutic strategy against both obesity and several inflammatory chronic diseases obesity-related.
