Food is so important to survival, food preservation is one of the oldest technologies used by human beings .We are looking for healthy food and we have been preserving food for at least four decades. Preservation of foods usually reduces bulk. This makes their transportation and storage easier since it requires less space. Availability of some preserved foods can add to the variety and nutritive value of meals. The health benefits of preserved food are far superior and processed at the height of their freshness. If we don’t preserve our food it will spoil and go to waste. A way of preserving food using techniques salting, freezing, smoking, drying , blanching etc.
