Ce livre vise à faire revivre la mémoire et la culture régionales en répertoriant les recettes traditionnelles des familles du Minas Gerais, afin qu’elles ne se perdent pas avec le temps et qu’elles deviennent un héritage pour l’avenir. Pour ce faire, il donne un aperçu des origines de la cuisine locale et des influences que les groupes ethniques ont exercées sur les coutumes alimentaires du Minas Gerais, en particulier dans la ville de Passos et dans la région environnante. Il identifie ensuite les ingrédients locaux et les recettes typiques, et constate que certaines habitudes alimentaires sont tombées en désuétude, tandis que d’autres persistent dans la vie quotidienne des familles traditionnelles.
