Le liquide salivaire est une sécrétion exocrine composée d’environ 99 % d’eau, contenant divers électrolytes (sodium, potassium, calcium, chlorure, magnésium, bicarbonate, phosphate) et des protéines, représentées par des enzymes, des immunoglobulines et d’autres facteurs antimicrobiens, des glycoprotéines des muqueuses, des traces d’albumine et certains polypeptides et oligopeptides importants pour la santé bucco-dentaire. Il y a également du glucose et des produits azotés, tels que l’urée et l’ammoniac. Les composants interagissent et sont responsables des différentes fonctions attribuées à la salive. La salive est le produit de plusieurs glandes salivaires situées sous la muqueuse buccale. Chaque jour, les glandes salivaires humaines produisent près de 600 ml de salive séreuse et mucineuse6. Une fois que la salive traverse les canaux et pénètre dans la cavité buccale, elle se mélange aux cellules sanguines, aux micro-organismes et à leurs produits, aux cellules épithéliales buccales et à leurs produits, aux débris alimentaires et aux sécrétions des voies respiratoires supérieures.
