Nos produce perplejidad comprobar que, hasta el momento, este no era el caso de Valencia, que carecía de una publicación de estas características que explicara de una manera rigurosa, pero también amena y didáctica, su implantación y desarrollo en un lugar donde alcanzaron una gran importancia social y económica.La inclinación particular de Arturo Cervellera, autor de este trabajo, por los cafés sin duda tiene mucho que ver con la genética pues es descendiente de unos intrépidos hosteleros creadores del Café Brasileño en Burjassot a finales del XIX, establecimiento que fue todo un referente municipal y que tuvo continuidad familiar hasta el año 2006.Este libro es una compilación de aquellos nostálgicos negocios, realizada desde la modesta visión de un aficionado a la Historia, sin olvidar el método y las técnicas de investigación con la asistencia de numerosas publicaciones en forma de guías, anuarios, periódicos o revistas. Siguiendo un orden cronológico, se describen los avatares de 101 cafés desde los orígenes inciertos hasta los cafés actuales, un recorrido por este patrimonio cultural digno de conservar, aunque sea en forma de memoria escrita.
